The 2021 Shiraz from the esteemed Ebenezer sub-region of the Barossa Valley presents a captivating tapestry of flavours and aromas that are quintessential to its origin. In the glass, this wine displays a profound depth of colour, a luxurious purple hue with a rim that speaks of vitality and youth.
On the nose, a symphony of dark fruits greets the senses; ripe blackberries and plums are underscored by a hint of mocha and an elegant touch of oak that whispers of its time spent maturing in the finest French barrels for 18 months. Layers of spice, perhaps a suggestion of star anise and a pinch of white pepper, add complexity and allure.
The palate is a revelation of boldness and balance. It offers a generous full body that envelops the mouth with velvety tannins and a rich, ripe fruitiness that Barossa Shiraz is celebrated for. The 2022 Thea Shiraz was sourced from the Freeman’s vineyard in the Hilltops region. The grapes were hand-picked and fermented as 25% whole-bunch to enhance the lush and vibrant fruit, as well and provide tannin structure. The berries were lovingly basket pressed into French oak for 8 months. This is a cracking pizza red that can be enjoyed all year round.

The Chardonnay hails from the cool-climate vineyards of Yea Valley in Victoria's Upper Goulburn region, which was matured in seasoned French oak barriques for 12 months. The W.S. was created from a single barrel that stood out.
With its ample weight and richness, it unveils layers of stone fruit, nectarine, citrus, and melon flavours, promising graceful evolution with age. A special one off release with only 280 bottles produced and exclusive to Wine Simple.
Discover the 2021 Kay Brothers Basket Pressed Shiraz, a McLaren Vale gem renowned for its deep, rich flavours. This Shiraz exhibits aromas of ripe blackberry, liquorice, and dark plum, with hints of toasty oak, dark chocolate, and pepper. The 2023 Dormilona Clayface Cabernet is a standout expression of natural winemaking from Margaret River, carefully crafted by the talented Josephine Perry. This Cabernet is made with grapes that are hand-harvested and then gently destemmed before being placed into Italian amphorae. The traditional winemaking process includes daily foot-stomping and a lengthy maceration on the skins, which imparts a deep, complex character to the wine.
After five months, the wine is basket-pressed and returned to the amphorae to settle, ensuring a pure and unfiltered final product. The result is a medium-bodied Cabernet Sauvignon with elegant layers of blackcurrant, plum, and subtle herbal notes, all supported by fine tannins and a refreshing acidity.
