Crafted with meticulous care by Georgie and her team, the Georgia Dale W.S. Chardonnay exudes elegance and depth.
The Chardonnay hails from the cool-climate vineyards of Yea Valley in Victoria's Upper Goulburn region, which was matured in seasoned French oak barriques for 12 months. The W.S. was created from a single barrel that stood out.
With its ample weight and richness, it unveils layers of stone fruit, nectarine, citrus, and melon flavours, promising graceful evolution with age. A special one off release with only 280 bottles produced and exclusive to Wine Simple.
The 2021 Shiraz from the esteemed Ebenezer sub-region of the Barossa Valley presents a captivating tapestry of flavours and aromas that are quintessential to its origin. In the glass, this wine displays a profound depth of colour, a luxurious purple hue with a rim that speaks of vitality and youth.
On the nose, a symphony of dark fruits greets the senses; ripe blackberries and plums are underscored by a hint of mocha and an elegant touch of oak that whispers of its time spent maturing in the finest French barrels for 18 months. Layers of spice, perhaps a suggestion of star anise and a pinch of white pepper, add complexity and allure.
The palate is a revelation of boldness and balance. It offers a generous full body that envelops the mouth with velvety tannins and a rich, ripe fruitiness that Barossa Shiraz is celebrated for. Underneath the immediate lushness, there is a precise structure, a line of acidity that carries the wine to an impressive length on the finish.
Secondary notes of liquorice, cedar and leather weave through the wine, leading to a finish that is both powerful and graceful. This Shiraz is a reflection of the Ebenezer terroir – robust yet refined, with a potential to age gracefully, developing greater nuances over time.
Téssera Middle Child Cabernet Sauvignon delivers an enticing blend of earthy tones intertwined with vibrant notes of berry, liquorice, and cherry, crafting an aromatic prelude that beckons a deeper exploration. The winemaking techniques of basket press and open fermentation, followed by 20 months of aging in American Oak barrels, enrich the wine with a robust structure and graceful aging potential.
On the palate, the wine unfolds in layers of lush fruit flavours. The initial impression is fruit-forward, featuring dominant notes of blackberry and mulberry. This berry richness seamlessly transitions into sophisticated undertones of smooth chocolate, creating a delightful contrast that is both bold and balanced. The finish is long and satisfying, with a lingering complexity that echoes the initial aromatic promises.
Elegant cool climate Syrah from the Heathcote wine region of Victoria.
Aged in 100% new Hungarian oak for 12 months (which delivers a point of difference that is half way between French and American oak). Impressive, well structured and beautiful.
Last vintage scored 94 points in Hallidays Wine Companion and completely sold out. Will age gracefully in the cellar | 5+ years
This wine embraces Semillon in its traditional form but refocuses the style through added weight and texture on the palate.

Discover the 2021 Kay Brothers Basket Pressed Shiraz, a McLaren Vale gem renowned for its deep, rich flavours. This Shiraz exhibits aromas of ripe blackberry, liquorice, and dark plum, with hints of toasty oak, dark chocolate, and pepper. The palate is rich and plush with succulent dark fruits, supported by a well-integrated tannin structure, leading to a long, juicy, and vibrant finish. Perfect for those seeking a full-bodied, flavourful red wine.
The 2023 Dormilona Clayface Cabernet is a standout expression of natural winemaking from Margaret River, carefully crafted by the talented Josephine Perry. This Cabernet is made with grapes that are hand-harvested and then gently destemmed before being placed into Italian amphorae. The traditional winemaking process includes daily foot-stomping and a lengthy maceration on the skins, which imparts a deep, complex character to the wine.
After five months, the wine is basket-pressed and returned to the amphorae to settle, ensuring a pure and unfiltered final product. The result is a medium-bodied Cabernet Sauvignon with elegant layers of blackcurrant, plum, and subtle herbal notes, all supported by fine tannins and a refreshing acidity.
Perfect for those who appreciate a handcrafted wine with minimal intervention, the 2023 Clayface Cabernet is both a celebration of traditional methods and a modern take on Margaret River’s rich terroir.
Yurilla Vineyard sits on the valley floor and is a warmer site for the King Valley, a perfect fit for Fiano, which originally hails from Campania in Italy and needs some warmth to bring up ripeness in line with its acidity.
The wine displays an abundance of tropical fruits and lychee on the nose that follow through to the palate. Refreshing acidity balanced with a touch of residual sugar that is barely noticeable causes this wine disappears from the glass rather quickly.
