Aromas of lemon zest, white blossom and gentle herbs lead to a layered palate of citrus, white pepper and savoury spice with bright acidity and a silky glide.

Tiny two-barrel release from a low-yield 2024 season; long, cool ferment in French oak with partial malolactic and lees work for extra finesse.

"Only two barrels produced of this wine. It was fermented on its lees in the older oak barrels. A moreish, delicious white wine of texture and levity, pure fruit and gentle savouriness. It delivers the complexity that should come with the fumé blanc moniker, subtle richness, key elements of woody spices and nutty, yeast-derived details, and they're here, spun attractively through lemon juice, faint passionfruit, snips of gooseberry and grassiness with white pepper doused gently over it all. Line and length here too. Texturally, it's glassy and cool, yet a little pucker forms in the finish. Elegance and class. One could say ludicrously well priced too." Winemaker's Notes

There was a 65%+ reduction in yields for Sauvignon Blanc off the property in 2024. Which means, there was little to no fruit, so this tiny two-barrel release is extra special! Due to warm conditions to round out the growing season paired with the low yields, we saw amazing flavours show through the fruit and therefore the final wine.
As always, acid levels stayed high, and in the winery after a long, slow, cold fermentation in French oak, the wine underwent 50% malolactic fermentation and less stirring over its 10 months in barrel. Sauvignon Blanc, but not as you know it. Crisp, clean and delicious.

Further Information About this Wine

“Fumé Blanc” is essentially Sauvignon Blanc made with a barrel-influenced approach—think subtle smoke, savoury spice and creamy texture from oak and lees, rather than the overtly grassy, pungent style. The term itself was popularised by Robert Mondavi in the late 1960s to signal a drier, more complex take on the variety, inspired by oak-aged expressions (and the “fumé” reference to smoky/flinty characters). In the Adelaide Hills—especially cool, high-altitude Piccadilly—this style plays beautifully: ripe citrus and white-flower perfume are layered with gentle toast, nougat and a rounded mid-palate from fermentation and maturation in seasoned French oak, sometimes with partial malolactic. The result is Sauvignon Blanc with shape and savoury depth, still bright and refreshing, but more gastronomic and cellar-friendly than many unoaked versions.
