Made from shiraz and in a youthful style so it’s all upfront fruit of black plums and red cherries spiced to the max with some meaty reduction adding a savoury element. Rather perky acidity and grainy tannins work across a lighter-framed palate, and it ends up a moreish drink. Pass the charcuterie platter, please.

Dormilona, established by Josephine Perry in 2012, has quickly gained a reputation for producing high-quality, natural wines. Perry's extensive experience in both old-world and new-world winemaking regions, including Spain and Australia, has influenced her innovative approach. The winery is known for using amphoras from Spain, Italy, and Georgia, as well as extended skin contact techniques to enhance flavour complexity and depth.

Further Information About this Wine

The 2023 Dormilona Tinto Shiraz is an excellent representation of Dormilona's philosophy of minimal intervention winemaking. The grapes are organically grown in the cool climate of Margaret River, harvested early in the morning to maintain freshness. The wine undergoes wild fermentation in open bins and is basket pressed before sugar completion. It is then naturally malolactic fermented, racked, blended, and bottled without any additions, finings, or filtration, using only minimal sulphur.
