Winemaker's Notes

Organic viticulture is in place, a small amount of undervine cultivation is used to control troublesome weeds but apart from that the midrow is allowed to go to seed, with the occasional mowing to keep it manageable.

2020 started off, as was the case with 2019 prior, with a drier than usual winter and spring. These lads had minimal competition in the vineyard though they struggle a little with lack of water. Small berries led to higher flavour
concentration and structure, but they ripened evenly due to a good flowering and berry set in the early stages of the season.

The vinification is similar to prior years, 50% of the grapes destemmed and allowed to ferment dry on skins (usually 9-12 days), bringing out the darknesss, density and structure of the wine. It’s then pressed into neutral French puncheons and left in elevage for 12-14 months.

The other 50% is destemmed and pressed after 3 days on skins into barrels, and allowed to ferment as juice, bringing out the primary fruit aromas and elegance of the wine. These two components compliment each other perfectly to allow a wine that is both dense and elegant, structured and smooth, dark and bright fruited! After elevage it is racked, bottled with no fining or filtration and a hit of sulphur.

Cellaring Recommendations

The 2020 Seaside Cabernet Franc is enjoyable now but has the potential to age gracefully for up to 8-10 years. With time, the wine will develop more complexity and depth, while maintaining its vibrant fruit character.

About the Winemaker: Dave Geyer

Dave Geyer is committed to reviving and nurturing neglected vineyards, and the Ulooloo Syrah reflects his philosophy of minimal intervention. The 2022 growing season produced Syrah with remarkable intensity of fruit and balanced acidity. Fermented naturally and aged in old French hogsheads and puncheons, the wine has a refined structure with elegant tannins and vibrant acidity.

After a childhood in the Barossa Valley, Dave found himself working in the vineyards of Torbreck in 2002. This sparked his interest in all things viticulture and preceded a 7-year stint in the winery. Given an opportunity to travel for vintage to the US in 2007, the goal of one day producing his own wines was cemented. He sought to control the process from the vineyard, with the elimination of synthetic chemicals to the winery where the mantra - "less is more" rings true. Reviving and nurturing some of the neglected vineyards of the region to produce honest, innovative, and delicious wines.
