Shiraz sourced from St Johns at the northern extremity of the Barossa Valley. A very deeply coloured wine with rich aromas of macerated blood plums, blackberry, black cherry and cassis. Hints of baking spice, licorice, Christmas cake, Old Jamaican chocolate, olive tapenade, herbs and pastis. Great fruit density with a sandy tannin grip and a real sense of compression and latent power, finishing inky with graphite-edged black fruits and plenty of grunt.

Winemaker's Notes

The 2022 vintage in the Northern Barossa produced aromatic Shiraz fruit with great depth and richness. Fruit for HATCH St Johns Shiraz was fermented on skins in small open top fermenters with gentle plunging and irrigation for 5-10 days to make a powerful, full bodied and opulent wine with vibrance and purity. The palate has dark red fruits, is round, soft with seductive oak and silky tannins. HATCH is delicious now however you will be rewarded with medium to long-term cellaring.
Enjoy with barbequed, roasted, grilled or slow cooked red
meats particularly beef. It also pairs perfectly with spicy Asian meat dishes.

About the Winemaker – Chris Hatch

Chris Hatch’s journey into winemaking began with a love of science, which led him to study at the University of Adelaide. After gaining hands-on experience at the Australian Wine Research Institute, he discovered his passion for winemaking – a career that blends both science and tradition. With a degree in Microbiology and Organic Chemistry, Chris embarked on a successful career at Kaiser Stuhl, later moving to Orlando before being recruited by Wolf Blass in 1987.

Chris spent over three decades with Treasury Wine Estates (TWE), becoming the Chief Winemaker responsible for some of Australia’s most iconic wine brands, including Penfolds, Wynns, Wolf Blass, and Lindeman’s. His dedication and skill led him to win numerous prestigious awards, including multiple International Winemaker of the Year and International Red Winemaker of the Year titles.

After retiring, Chris launched Hatch Wines, a small, family-run brand that focuses on creating exceptional wines that reflect the best regional varietal expressions. His winemaking philosophy centres on balance, elegance, and finesse, producing wines that are excellent both in their youth and with age. With Hatch Wines, Chris continues his bold pursuit of perfection, sharing his passion and expertise with a new audience.
